This healthier Greek version of the Mexican 7 Layer dip, is great for any holiday party. Full of delicious flavor and quick to make. Serves 6-8 people.
Ingredients:
- 2 – 7 oz containers of your favorite hummus, (we used garlic)
- 1 – 7 oz container of plain Greek yogurt
- 1 large tomato, diced
- 2 -3 seeded Persian cucumbers, diced
- 1 red onion, large diced, and pickled (see recipe below)
- 1/3 cup crumbled feta cheese
- 2 tbsp finely chopped parsley
- pinch of coarse sea salt
- pita chips, carrots, or crackers for serving
Directions Greek Dip:
- Spread hummus in a smooth layer of a 8 x 8 inch square baking pan. Dollop the Greek Yogurt on top of the hummus, then spread gently to create a new layer.
- Scatter the tomato, cucumber, onion, feta, to form layers. Sprinkle with the parsley and salt.
Directions for the Pickled Onion:
1. In a small saucepan, bring 1 cup vinegar and 1 cup sugar to a boil.
2. Once the sugar has dissolved, turn off the heat and add the onion.
3. Let rest until the onion has softened a bit and begins to turn purple, about 30 minutes.
4, Refrigerate. These may be made several days in advance and will last a month in your refrigerator.
You can also place your favorite seasonings. We placed whole peppercorn, and fresh parley. Place them right when you put the onion in.
