This recipe makes 2 Servings. It is low in calories, and quick to put together. The great thing about this recipe it can all be done on a baking sheet.
Ingredients
- 1 TBSP olive oil
- 1/4 Cup Barbecue Sauce
- 1/4 Ranch Dressing
- 2 Chicken Breasts
- 1/2 cup flour
- 1 cup panko
- 1 tsp garlic powder
- 1 tsp oregano
- 1/2 tsp dill weed
- 1/2 tsp coriander
- 1/2 tsp salts
- 1/4 tsp pepper
- 1/2 cup either shredded or grated parmesan cheese
- 1 Egg
- Cooking spray
- 1/2 pound of broccoli
- 3 carrots
Directions
- Step 1: Preheat oven to 400 Degrees and spray a baking sheet with cooking spray.
- Step 2: Trim ends from broccoli, then cut crowns into 1-inch florets. Then cut ends of carrots, and cut into 1/2″ circles. Place on the baking sheet. Drizzle with 1tbsp of olive oil and a pinch of salt and pepper. Stir. Set to one side of pan.
- Step 3: Pat dry chicken, and cut each breast into three strips vertically.
- Step 4: Prepare 3 medium bowls. Bowl 1: Add 1 cup of flour. Bowl 2: Add egg, garlic powder, oregano, dill weed, coriander, salt and pepper and 1 tbsp of water. Use a fork to mix everything together. Bowl 3: Stir panko and parmesan cheese together.
- Step 5: Working in batches, dip chicken in flour, then egg mixture, turning to coat; let excess egg drip back into bowl. Dredge in panko mixture, pressing to help adhere breading. Spray with cooking spray for extra crisp, and place on baking sheet.
- .Step 6: Place baking sheet into oven and cook for 15 minutes. Turn chicken strips over half way. You want them to be brown on both sides.
- Step 7: While chicken is cooking stir Ranch and BBQ sauce together in a small bowl .
- Step 8: Place everything on a plate and serve with BBQ/Ranch sauce. Enjoy!
