This easy pilaf is full of flavor and makes a perfect side dish for our Roasted Cauliflower Spanakopita Melts. This make 4 servings. Pre time 5 minutes. Cook time 15 minutes.

Ingredients

  • 2 garlic cloves, minced
  • 1 tbsp extra virgin oil
  • 1 cup long grain white rice
  • 1/2 tsp dried oregano
  • 1/2 tsp dried dill
  • 1/4 tsp salt and pepper
  • Juice and zest of 1 lemon,
  • 2 cups vegetable broth

For garnish

  • 2 tsps dried oregano oregano
  • 1 tsp dried parsley
  • 1/2 tsp dill
  • 1 tbsp extra virgin olive oil
  • Salt and pepper

Directions

  • Heat 1 TBSP of extra virgin olive oil to a large sauce pan pan over medium high heat. Add the garlic, zest, and herbs, stir. Cook for 30 seconds.
  • Add vegetable broth and pour in the rice and stir. Bring to a boil.
  • Lower to simmer and cover. Cook for 15 minutes.
  • Remove rice from heat. Using a fork fluff the rice. Add lemon juice and stir
  • Add garnish ingredients. Stir. Serve on plates or a large serving tray.
