This easy pilaf is full of flavor and makes a perfect side dish for our Roasted Cauliflower Spanakopita Melts. This make 4 servings. Pre time 5 minutes. Cook time 15 minutes.
Ingredients
- 2 garlic cloves, minced
- 1 tbsp extra virgin oil
- 1 cup long grain white rice
- 1/2 tsp dried oregano
- 1/2 tsp dried dill
- 1/4 tsp salt and pepper
- Juice and zest of 1 lemon,
- 2 cups vegetable broth
For garnish
- 2 tsps dried oregano oregano
- 1 tsp dried parsley
- 1/2 tsp dill
- 1 tbsp extra virgin olive oil
- Salt and pepper
Directions
- Heat 1 TBSP of extra virgin olive oil to a large sauce pan pan over medium high heat. Add the garlic, zest, and herbs, stir. Cook for 30 seconds.
- Add vegetable broth and pour in the rice and stir. Bring to a boil.
- Lower to simmer and cover. Cook for 15 minutes.
- Remove rice from heat. Using a fork fluff the rice. Add lemon juice and stir
- Add garnish ingredients. Stir. Serve on plates or a large serving tray.
