Ingredients

  • 1 cup basmati rice
  • 1 tbsp of olive oil
  • 1/4 tsp salt
  • 1/2 lemon, zested and juiced
  • 1 garlic clove, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 2 cups stock, chicken or vegetable

Directions

  1. Heat 1 TBSP of oil on medium high heat
  2. In a small bowl, combine salt, zest, garlic clove, basil, and oregano.
  3. Place herbs into the pan, and stir for 30 seconds to 1 minute.
  4. Add stock, and rice.
  5. Bring to a boil. Reduce heat to simmer, cover, and let cook for 15 minutes.
  6. Remove from heat, let cool for 10 minutes and add lemon juice. Stir.
