Herb Lemon Rice

Ingredients
- 1 cup basmati rice
- 1 tbsp of olive oil
- 1/4 tsp salt
- 1/2 lemon, zested and juiced
- 1 garlic clove, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- 2 cups stock, chicken or vegetable
Directions
- Heat 1 TBSP of oil on medium high heat
- In a small bowl, combine salt, zest, garlic clove, basil, and oregano.
- Place herbs into the pan, and stir for 30 seconds to 1 minute.
- Add stock, and rice.
- Bring to a boil. Reduce heat to simmer, cover, and let cook for 15 minutes.
- Remove from heat, let cool for 10 minutes and add lemon juice. Stir.
