Ingredients

  • 1 cup raw almonds, or other favorite nuts, coarsely chopped
  • 1 1/2 cup all – purpose flour
  • 1 1/4 cup old fashioned oats
  • 1/3 cup sugar
  • 1/3 brown sugar
  • 1 tsp kosher salt
  • 1/2 tsp baking soda
  • 3/4 cup unsalted butter
  • 1 cup of your favorite jam, we used raspberry

Directions

  1. Preheat oven to 350 degrees, with a rack in the center.
  2. Place nuts in a small pan, and bake in the oven for 5 minutes, until lightly browned and fragrant. Let Cool.
  3. In a large bowl whisk together flour, oats, both sugars, salt, and baking soda.
  4. Add nuts, and stir to combine.
  5. Pour in melted butter, using a spatula stir until well combined.
  6. Spray a 8″ x 8″ square pan with cooking spray. Line the bottom of the pan with foil or parchment paper. Leave extra on top for easy lift out of pan.
  7. Press 2/3’s of the oat mixture into an even, firmly packed layer on the bottom of the pan.
  8. Using a spatula, spread the jam evenly across the oat mixture. Leave a 1/4″ space on the edge. This allows the jam to spread.
  9. Evenly sprinkle the remaining oat mixture.
  10. Place in oven, and bake for 40 minutes, turning halfway. Bake until it is golden brown on top.
  11. Let the granola bars cool completely, about 3 hours in the pan on a rack.
  12. Lift up the parchment, bring to a cutting board and cut into 1″ or 2″ squares, and store in an airtight container.
