Raspberry Almond Granola Bars

Ingredients
- 1 cup raw almonds, or other favorite nuts, coarsely chopped
- 1 1/2 cup all – purpose flour
- 1 1/4 cup old fashioned oats
- 1/3 cup sugar
- 1/3 brown sugar
- 1 tsp kosher salt
- 1/2 tsp baking soda
- 3/4 cup unsalted butter
- 1 cup of your favorite jam, we used raspberry
Directions
- Preheat oven to 350 degrees, with a rack in the center.
- Place nuts in a small pan, and bake in the oven for 5 minutes, until lightly browned and fragrant. Let Cool.
- In a large bowl whisk together flour, oats, both sugars, salt, and baking soda.
- Add nuts, and stir to combine.
- Pour in melted butter, using a spatula stir until well combined.
- Spray a 8″ x 8″ square pan with cooking spray. Line the bottom of the pan with foil or parchment paper. Leave extra on top for easy lift out of pan.
- Press 2/3’s of the oat mixture into an even, firmly packed layer on the bottom of the pan.
- Using a spatula, spread the jam evenly across the oat mixture. Leave a 1/4″ space on the edge. This allows the jam to spread.
- Evenly sprinkle the remaining oat mixture.
- Place in oven, and bake for 40 minutes, turning halfway. Bake until it is golden brown on top.
- Let the granola bars cool completely, about 3 hours in the pan on a rack.
- Lift up the parchment, bring to a cutting board and cut into 1″ or 2″ squares, and store in an airtight container.
