Ingredients

  • 1 Large Onion, sliced thin
  • 3/4 Cup Apple Cider, White Wine, or Red Wine Vinegar
  • 1 TSP of Fine Sea Salt
  • 2 TBSP of your favorite sweetener (maple syrup, sugar, honey)

Directions

  • Place onions in a mason jar or other air tight container.
  • Place vinegar, sweetener and salt in a small sauce pan.
  • Heat on medium until it gets to a high simmer. Stir until sugar dissolves.
  • Pour heated liquid over onions and let sit covered for 30 minutes to over night in refrigerator.

Variations:

  • Herbs: Add 1/4 tsp each dill weed, Italian seasoning, cumin, and 3-4 four grinds of fresh pepper with the onion
  • Garlic: Add 2 Cloves sliced thinly with the onion
  • Spicy: Add some red chili flakes, or habanero peppers
  • Citrus: Use 1/2 cup fresh Orange Juice, and 1/4 cup lime juice in exchange for the vinegar.

Making pickled onions.
