Zucchini “Linguini” With Roasted Garlic Shrimp
Serves 4
INGREDIENTS
1-pound shrimp, peeled and deveined
½ teaspoon dried red peppers
2 cloves of garlic
2 zucchinis
½ red onion, sliced thin
½ yellow bell pepper sliced thin
1 lime, juiced (about 2 tablespoons)
1 teaspoon kosher salt
1 teaspoon black pepper
2 tablespoons olive oil
PREPARATION
- Preheat oven to 400°F
- Using a vegetable peeler, peel long strips from the zucchini.
- In a small bowl marinate 1 tsp of olive oil, minced garlic, red pepper flakes, and shrimp.
- In a large bowl, mix the zucchini strips, bell pepper sliced, red onion sliced, lime juice, salt, pepper, and 1 1/2 tbsp olive oil until the mixture is evenly coated.
- On a roasting pan, spread both bowls into one even layer and bake for 8 minutes or vegetables are soft.
